Loaded Vegan Nachos

Total Time: 40 Minutes | Prep Time: 15 Minutes | Cook Time: 25 Minutes | Servings: 6

Ingredients
5 slices of vegan cheddar cheese (I use Violife)
1/2 cup of unsweetened vanilla almond milk
2 shallots
2 petite bell peppers
1 cup of fresh salsa
1/4 lb of ground Beyond Meat
4 cups of tortilla chips (approximate)

Directions
1. Heat a medium sized frying pan to medium heat. Drizzle a small amount of oil. Slice shallots and bell peppers and add to pan. Add in fresh salsa and ground Beyond Meat. Saute for 10 minutes.

2. Add 5 slices of vegan cheddar cheese and 1/2 cup of unsweetened vanilla almond milk to a small sauce pan. Heat on medium heat and stir for approximately 15 minutes, or until cheesy is fully melted.

3. Preheat oven to 350F. Line the bottom of a baking pan with tortilla (approximately 4 cups).

4. When finished, add vegetable mixture then cheese mixture to pan.

5. Bake for 15 minutes.

6. Remove from oven, let cool, and enjoy!
