No-Mayo Macaroni Salad

No-Mayo Macaroni Salad

Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
1 cup of macaroni pasta
1/2 cup of diced red onion
1/2 cup of pepperoncini
3 lunchbox peppers
1 medium sized carrot
1 cup of grape tomatoes
Dressing
1 cup of fresh cilantro
2 limes
1/2 cup of sunflower oil
1/4 tsp of sea salt
1 tbsp of nutritional yeast 

Directions
1. Bring a large pot of water to a boil.  Add in pasta and cook for approximately 10 minutes, or until pasta is done to your liking.  Strain and set aside to cool.

2. While pasta is cooking, dice red onion and slice pepperoncini, peppers and tomatoes.  Finely grate carrot.  Set veggies aside.

3. To make dressing, add cilantro, juice of 2 limes, sunflower oil, sea salt and nutritional yeast to a mason jar.  Use an immersion blender to puree until smooth.

4. Once pasta is done, add all veggies to pasta and drizzle with dressing.  Mix well and let cool.

5. Serve and enjoy!
