One-Pot Black Bean Chili
One-Pot Black Bean Chili

Ingredients
4 cloves of garlic
1/2 of a yellow onion
28oz of canned diced tomatoes
2 cups of vegetable broth
30oz of canned black beans
4oz of canned green chilis
2 tsp of chili powder
1 tsp of paprika
1 tsp of onion powder
1 tsp of garlic powder
1/4 tsp of cumin
1/4 tsp of dried chipotle pepper
Optional
1 cup of vegan shredded cheese
Directions
1. Heat a large pot to medium high heat and drizzle in a small amount of oil. Mince garlic and slice onion. Add to pot and saute for 2 minutes.
2. Add diced tomatoes, vegetable broth, black beans, green chilis, chili powder, paprika, onion powder, garlic powder, cumin, and chipotle pepper to pot. Mix well. Bring to a boil then reduce to a simmer and cook for 20 minutes, stirring occasionally. Remove from heat and let cool.
3. When ready to serve, top with vegan cheese and enjoy!
