Vegan Pumpkin Spice Cookies

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 8

Ingredients
1 and 1/2 cups of whole wheat flour
1/2 cup of baking stevia
2 tsps of cinnamon
1/2 tsp of coriander
1/4 tsp of cloves
1/4 tsp of nutmeg
1/2 tsp of baking soda
1/2 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350 F.

2. In a bowl, combine whole wheat flour, stevia, cinnamon, coriander, cloves, nutmeg, baking soda, and almond milk.
3. Mix well.

4. Portion 1 tbsp of dough onto a baking sheet to make one cookie. Repeat until all dough is used. Dough should yield approximately 8 cookies.

5. Bake for 20 minutes, or until cookies have browned.

6. Remove from oven, let cool and enjoy!
