Quinoa Summer Salad

Quinoa Summer Salad

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 2

Ingredients
1 cup of raw quinoa
1 zucchini
1 summer squash
4 diced tomatoes
1/2 cup of sliced cucumbers

Directions
1. Rinse and strain quinoa. Add to a medium sized pot with 2 cups of water. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess water has evaporated.

2. Slice zucchini, summer squash, cucumbers and tomatoes. Set cucumbers and tomatoes aside.

3. Heat a medium sized frying pan to medium heat and saute for 15 minutes.

4. Once quinoa is finished, portion quinoa, summer squash, zucchini, 2 diced tomatoes and 1/4 cup of sliced cumbers into each bowl. Serve and enjoy!
