Roasted Cauliflower Tacos

1 yellow onion
1 head of cauliflower
1 bell pepper
1 serrano pepper
Sunflower oil
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of paprika
1/2 tsp of cayenne pepper
1/2 tsp of oregano
4 tortillas
1/2 cup of green leaf lettuce
1/4 cup of sunflower oil
2 tsps of unsweetened soy milk
1 tbsp of adobo sauce
1 tsp of maple syrup

1. Preheat oven to 400 F.

2. Slice onion and bell pepper.  Dice serrano.  Add cauliflower, onion, bell pepper and serrano to a non-stick baking sheet.  Drizzle with sunflower oil and sprinkle with onion powder, garlic powder, paprika, cayenne powder, and oregano.  Mix well.

3. Bake for 40 minutes, tossing after 20 minutes.  Remove from oven and let cool.

4. To make sauce, add sunflower oil, soy milk, adobo sauce, and maple syrup to a small bowl.  Use and emulsion blender to puree until smooth.  Set aside.

5. When ready to serve, portion veggies between four tortillas.  Top with shredded green leaf lettuce and sauce.  Serve and enjoy!
