Roasted Cauliflower with Spicy Red Pepper Sauce

Ingredients
Cauliflower:
1 head of cauliflower
2 tsp of garlic powder
2 tsp of onion powder
1 tsp of paprika
1/2 tsp of cumin
1/2 tsp of chili powder
Red Pepper Sauce:
4 fresno peppers
2 red bell peppers
1/2 cup of soften cashews
1/2 tsp of cumin
1/2 tsp of coriander
1 tsp of paprika
1 tsp of garlic powder
Optional: 1/2 cup of water
Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.
2. Cut cauliflower into 1/2" steaks, trimming any leaves. Cut fresno peppers in half and remove seeds. Quarter bell peppers, removing any seeds or white parts.
3. Add cauliflower steaks to baking sheet, brush both sides with oil and sprinkle with seasoning on each side. Bake for 40 minutes, flipping half way through. When done, cauliflower should be completely tender and cooked through. Remove from oven and let cool.
4. Add bell peppers and fresno peppers to a small baking dish. Drizzle with a small amount of oil and mix well. Bake for 40 minutes, flipping half way through. Remove from oven and let cool.
5. Once peppers have completely cooled, add to a blender along with softened cashews, 1/2 tsp of cumin, 1/2 tsp of coriander, 1 tsp of paprika, and 1 tsp of garlic powder. Blend until smooth. If you need to thin out the sauce or if your blender is having trouble, add up to 1/2 cup of water.
6. When ready to serve, portion sauce onto place and top with your cauliflower steaks. Serve and enjoy!
