Roasted Red Pepper Pasta

Roasted Red Pepper Pasta

Total Time: 50 Minutes | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Servings: 2

Ingredients
2 red bell peppers
1 pint of grape tomatoes
Sunflower oil (or oil of your choice)
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of oregano
2 tbsp of nutritional yeast
4 oz of spaghetti
Optional For Garnish
Vegan parmesan 

Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.

2. Slice bell peppers into large pieces, removing seeds.  Add to baking sheet along with tomatoes.  Drizzle with sunflower oil and sprinkle with onion powder, garlic powder and oregano.  Mix well and bake for 30 minutes, tossing after 15 minutes.  Remove from oven and let cool.

3. Bring a large pot of water to a boil.  Add in spaghetti and cook for approximately 10 minutes, or until done to your liking.  Strain and let cool.

4. Once peppers and tomatoes are fully cooled, add to a blender along with nutritional yeast.  Blend until smooth.  Pour over pasta and mix well.

5. When ready to serve, top pasta with vegan parmesan and enjoy!
