Sweet Potato Buddha Bowl (Vegan)

Total Time: 1 Hour and 15 Minutes | Prep Time: 15 Minutes | Cook Time: 1 Hour | Servings: 4

Ingredients
3 sweet potatoes
1 tsp of cumin
1 cup of wild rice
1 cup of dried pinto beans
Scallions for garnish

Directions
1. Preheat oven to 400F.

2. Skin and slice sweet potatoes into small wedges. Add to a baking pan and sprinkle with cumin. Drizzle with sunflower oil and mix well.

3. Cover and bake for 1 hour, tossing after 30 minutes.

4. In a medium sized pot, add 1 cup of wild rice. Cover with water and boil for 15 minutes, or until all excess water has evaporated.

5. Rinse 1 cup of dried pinto beans and add to a small sauce pan. Cover with water and boil for 20 minutes, or until beans have become tender.

6. When ready to serve, start with a bed of wild rice. Top with sweet potatoes and pinto beans. Garnish with diced scallions. Serve and enjoy!
