Ultimate Vegan Lentil Burritos

Ultimate Vegan Lentil Burritos

Ingredients
1/2 cup of uncooked wild rice
1/4 cup of uncooked lentils
2 shallots
3 cloves of garlic
8 campari tomatoes
2 petite bell peppers
1 jalapeno
1 cup of cooked kidney beans
3 tbsps of reduced sodium soy sauce
1 tsp of cornstarch
1/4 cup of nutritional yeast
1 tbsp of hot sauce
6 whole wheat tortillas
12 slices of vegan cheddar cheese (we use Violife)

Directions
!. Place wild rice in a pot and cover with water. Bring to a boil and reduce to medium heat until water has completely evaporated.

2. Rinse lentils in a fine strainer and place into a small pot. Cover with water and bring to a boil. Reduce to medium heat until water has completely absorbed.

3. While rice and lentils are cooking, slice shallots, tomatoes, peppers and mince garlic. Add to a large frying pan and saute for 10 minutes. Add in kidney beans and saute for an additional 5 minutes. Set aside.

4. When lentils are done, add to a small frying pan and combine with soy sauce, hot sauce, nutritional yeast and cornstarch. Mix well and saute on medium heat for 5 minutes. Set aside.

5. Preheat oven to 350 F and grease a glass baking dish.

6. Combine rice, lentils and veggie mixture into one pot and stir well.

7. Line each tortilla with 2 pieces of cheese and portion mixture equally into tortillas. Fold in the bottoms and left to right to seal burritos. Place into glass dish.

8. Bake for 20 Minutes.

9. remove from oven and let rest for 5 minutes. Serve and enjoy!
