Vegan Avocado Pesto Pasta

Vegan Avocado Pesto Pasta 

Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
8 oz of chickpea pasta
1 avocado
1/2 cup of pine nuts
2 cloves of garlic
1 cup of basil leaves (loosely packed)
1/2 cup of sunflower oil

Directions
1. Bring a large pot of water to a boil and add in chickpea pasta. Cook for approximately 15 minutes, or until done to your liking. Strain and set aside.

2. Add avocado, pine nuts, garlic, basil leaves, and sunflower oil to a blender. Puree until smooth.

3. Once pasta is done, add in avocado pesto sauce and mix well.

4. Let cool, serve and enjoy!
