Vegan Banana Pudding Recipe

Ingredients
2 bananas
2 cups of softened cashews
1 tbsp of maple syrup
1/2 tsp of vanilla extract
1/3 cup of unsweetened vanilla almond milk
6 vegan vanilla cookies or wafers

Directions
1. Add 1 banana, softened cashews, maple syrup, vanilla extract and almond milk to a blender. Puree until smooth.

2. Add vegan cookies to a bowl or plastic bag. Mash until cookies are finely crumbled. Set aside.

3. Layer a glass with 1-3 tbsp of pudding. Then add cookies crumbles. Repeat until all pudding is used.

4. Top with fresh banana slices and leftover cookie crumbles.

5. Serve and enjoy!
