Vegan Blueberry Muffins

Total Time: 36 minutes | Prep Time: 10 minutes | Cook Time: 25 minutes | Servings: 10

2 cups of all purpose flour
1/2 cup of stevia
1 tsp of baking soda
1 tps of baking powder
1/4 tsp of vanilla extract
1 lemon
1 cup of unsweetened vanilla almond milk
2 cups of blueberries


1. Preheat oven to 350F.

2. Add all purpose flour, stevia, baking soda, baking powder, vanilla extract, zest of 1 lemon, and almond milk into a bowl and mix well.

3. Add in 2 cups of blueberries and fold in.

4. Portion approximately 2 tbsps of mixture into each muffin cup.

5. Bake for 25 minutes or until muffins have begun to brown on top and are fully cooked through.

6. Let cool and serve and enjoy!
