Vegan Breakfast Burrito

Vegan Breakfast Burrito

Total Time:35 Minutes | Prep Time:15 Minutes | Cook Time:20 Minutes | Servings:4

Ingredients
15 oz of tofu
2 cloves of garlic
2 shallots
3 petite peppers
1 tbsp of nutritional yeast
1 tsp of paprika
1 tsp of onion powder
1 tsp of garlic powder
1 cup of shredded vegan cheese
4 whole wheat tortillas

Directions
1. Press tofu for 10 minutes.

2. Slice shallots and peppers and mince garlic.  Set aside.

3. Crumble tofu into a large frying pan.  Add in garlic, shallots and peppers.  Sprinkle in nutritional yeast, paprika, onion powder, and garlic powder.  Mix well.

4. Saute on medium high heat for 15 minutes, or until tofu has browned.

5. Remove from heat and sprinkle with vegan cheese.  Cover and allow cheese to melt for 5 minutes. 

6. When ready to serve, portion tofu mixture into a whole wheat tortilla. 

7.  Let cool.  Serve and enjoy!
