Vegan Breakfast Sandwich

Vegan Breakfast Sandwich

Total Time: 35 Minutes | Prep Time: 15 Minutes | Cook Time: 20 Minutes | Servings: 3

Ingredients
8 oz of tofu
1 lemon
1 tsp of flax seed oil
1 tsp of potato starch
1 tsp of onion powder
1 tsp of paprika
2 tbsps of nutritional yeast
3 English muffins
3 slices of vegan cheese
1 on the vine tomato

Directions
1. Press tofu for 10 minutes. 

2. While tofu is pressing, add juice of 1 lemon, flax seed oil, potato starch, onion powder, paprika and nutritional yeast to a bowl.  Mix well.

3. Slice tofu into small squares.  Lightly coat each side of tofu squares with mixture. 

4. Add tofu to a frying pan and cook on medium high heat for approximately 10 minutes per side, or until each side has browned.  Set aside to cool.

5. To make breakfast sandwiches, add tofu to a toasted English muffin and top with vegan cheese and tomato slices. 

6. Serve and enjoy!
