Vegan Cheesy Lentil Flatbread
Total Time: 1 Hour and 20 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour and 10 Minutes | Servings: 4
1 cup of bread flour
1 cup of warm water
1 packet of active dry yeast
1 cup of cooked lentils
2 tbsps of reduced sodium soy sauce
1 tbsp of cornstarch
4 slices of Violife chedder cheese (or preferred vegan cheese)
1. Add 1 cup of bread flour, warm water, and active dry yeast to a mixing bowl and knead dough for 5 minutes. Cover and let sit for 30 minutes.
2. Heat a medium sized frying pan to medium heat. Add in lentils, soy sauce and cornstarch and saute for 5 minutes. Remove from heat and let cool.
3. Preheat oven to 400 F and grease a baking pan. Add in dough and smooth so that it is evenly disbursed across the pan. Add lentil mixture to top and spread out evenly. Top with vegan cheese.
4. Bake for 40 minutes or until dough is completely cooked through. Remove from oven and let cool.
5. Serve immediately.
