Vegan Chicken and Rice Casserole

Vegan Chicken and Rice Casserole

Total Time: 1 Hour and 10 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour | Servings: 5

Ingredients
For Casserole
1 and 1/2 cups of wild rice
3 cups of vegetable broth
3 cloves of garlic
2 shallots
2 carrots
10oz of mushrooms
1/2 tsp of turmeric
2 tsps of thyme
1 tsp of rosemary
1 tsp of onion powder
1 tbsp of reduced sodium soy sauce
For Chicken
14oz of canned jackfruit
1 tsp of old bay seasoning
1 tsp of onion powder
1 tsp of potato starch
1 tbsp of reduced sodium soy sauce

Directions
1. Preheat oven to 400F.

2. Slice shallots, carrots, and mushrooms and mince garlic. 

3. Add wild rice to a large casserole dish.  Pour in vegetable broth and add in vegetables.  Sprinkle in turmeric, thyme, rosemary, onion powder and soy sauce.  Mix well.

4. Cover and bake for 30 minutes.  Remove cover and bake for an additional 30 minutes. 

5. While casserole is baking, add canned jackfruit to a bowl.  Break apart to create a shredded texture. 

6. Add old bay, onion powder, potato starch and soy sauce to jackfruit.  Mix well.

7. Add jackfruit to a frying pan and saute on medium high heat for 10 minutes, or until jackfruit has browned.  Set aside.

8. When casserole is done, remove from oven and let cool.  Top with jackfruit.  Serve and enjoy!
