Vegan Chicken Sandwich

Vegan Chicken Sandwich

Total Time: 20 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 2

Ingredients
1 cup of cooked, dry chickpeas
1 tbsp of nutritional yeast
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of potato starch
1/4 tsp of xantham gum
1/4 cup of reduced sodium soy sauce
2 whole wheat hamburger buns
Optional
2 slices of vegan cheese
2 leaves of lettuce
1 -2 rings of red onion
Vegan bbq sauce to taste

Directions
1. In a blender, combine cooked chickpeas, nutritional yeast, onion powder, garlic powder, potato starch, xantham gum and soy sauce. Blend until smooth.

2. Form 2 chickpea patties and add to a frying pan. Fry on medium high heat for 5 minutes per side, or until each side is browned. Optional: If you’re adding vegan cheese, add slices to each patty after flipping once. This will help the vegan cheese melt.

3. Once cooled, add chickpea patties to toasted hamburger buns and top with lettuce, red onion and bbq sauce.

4. Serve and enjoy!
