Vegan Chickpea Nuggets

Vegan Chickpea Nuggets

Total Time: 1 Hour | Prep Time: 10 Minutes | Cook Time: 50 Minutes | Servings: 2

1 cup of dried chickpeas
1/2 cup of nutritional yeast
1 tbsp of cornstarch
1 tsp of xanthan gum
1/4 cup of reduced sodium soy sauce

1. Rinse chickpeas and add to a small sauce pan. Cover with water and boil for 20 minutes. Strain and let cool.

2. Preheat oven to 350F.

3. Add cooled chickpeas, nutritional yeast, cornstarch, xanthan gum and soy sauce to a blender. Puree until well combined and chickpeas become dough like.

4. Form 8 nuggets and add to a baking sheet. Drizzle with a small amount of oil.

5. Bake for 20 minutes, flipping after 10.

6. Remove from oven and let cool. Serve and enjoy!
