Vegan Chocolate Muffins with Tigernut Flour

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 10

Ingredients
1 and 1/2 cups of tigernut flour
1/2 cup of stevia
1/2 cup of vegan cocoa powder
1 tsp of baking soda
1 tsp of baking powder
2 tsps of xanthan gum
2 cups of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350F.

2. In a bowl, combine sifted tigernut flour, stevia, vegan cocoa powder, baking soda, baking powder and xanthan gum. Mix dry ingredients and break up any clumps.

3. Add in 2 cups of almond milk and mix well.

4. Grease a muffin tin and add 2 tbsps of batter to each cup. Batter should yield approximately 10 muffins.

5. Bake for 30 minutes, or until muffins have fully cooked through.

6. Remove from oven, let cool and serve!
