Vegan Coconut Berry Pancakes

Ingredients
1/2 cup of almond milk
1 tsp of apple cider vinegar
1 cup of all purpose flour
1/2 cup of sugar
2 tsp of baking powder
1/4 tsp of vanilla extract
1/2 cup of shredded coconut
1/2 cup of fresh or defrosted raspberries
1/2 cup of fresh or defrosted strawberries
3/4 tsp of vegan butter
Optional to taste
Vegan butter
Maple syrup
Fresh raspberries
Fresh Strawberries
Directions
1. Add almond milk and apple cider vinegar to a cup. Mix well and refrigerate for 5 minutes.
2. Add flour, sugar and baking powder to a bowl. Mix well. When ready, pour in almond milk and add in vanilla extract. Mix well until batter is smooth. Add in shredded coconut, strawberries and raspberries. Mix until well combined.
3. Heat a small frying pan to medium high heat. Add 1/4 tsp of vegan butter to pan and melt. Portion 2-3 tbsp of batter into pan and cook for approximately 2-3 minutes per side, or until each side is browned and pancakes are fully cooked through. Repeat until all batter is used. Batter should yield approximately 4 pancakes.
4. Optional: once cooled, top with vegan butter, maple syrup and fresh berries to taste.
5. Serve and enjoy!
