Vegan Coconut Flour Chocolate Chip Cookies

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 8

Ingredients
1 cup of coconut flour
1/4 cup of stevia
1/2 tsp of baking soda
1/2 tsp of xanthan gum
3/4 cup of unsweetened vanilla almond milk
1 cup of vegan chocolate chips

Directions
1. Preheat oven to 350F and line a baking sheet with parchment paper.

2. In a bowl, combine coconut flour, stevia, baking soda, xanthan gum and almond milk. Mix well.

3. Add in vegan chocolate chips and mix well.

4. Portion 2 tbsps of dough onto a baking sheet to form one cookie. Repeat until all dough is used. Dough should yield 8 cookies.

5. Bake for 20 minutes or until cookies have browned.

6. Remove from oven, let cool and serve and enjoy!
