Vegan Fajitas with Chickpeas

Total Time: 20 Minutes | Prep Time: 5 Minutes | Cook Time: 15 Minutes | Servings: 2

Ingredients
3 cloves of garlic
2 shallots
1 bell pepper
1 jalapeno
1 cup of cooked dried chickpeas
Sunflower oil
1/4 cup of water
1 tbsp of reduced sodium soy sauce
1 tsp of chili powder
1 tsp of black pepper
8 oz of tomato paste
1 tbsp of maple syrup

Directions
1. Slice shallots, bell pepper and jalapeno, and mince garlic. Add to a large frying pan along with cooked chickpeas.

2. Drizzle with sunflower oil and saute for 10 minutes.

3. Add in water, soy sauce, chili powder, black pepper and tomato paste. Mix well.

4. Drizzle in 1 tbsp of maple syrup and mix well.

5. Reduce to low heat and cover. Let cook for 5 minutes.

6. Uncover and let cool. Serve and enjoy!
