Vegan Fried Rice with Ground Beyond Meat

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 4

Ingredients
1/2 cup of uncooked wild rice
2 cups of vegetable broth
2 shallots
3 cloves of garlic
1/2 package of ground Beyond Meat
1/2 cup of frozen peas
1/4 cup of teriyaki sauce

Directions
1. Combine wild rice and vegetable broth into a pot. Bring to a boil and reduce to medium-high heat. Cook until all liquid has evaporated.

2. Heat a large frying pan to medium heat and drizzle with oil. Dice shallots and mince garlic. Add to frying pan. Defrost peas by running under warm water. Add to pan. Crumble ground Beyond meat into pan.

3. Drizzle with 1/8 cup of teriyaki sauce and saute for 10 minutes., stirring frequently. Set aside.

4. When rice is done, add to frying pan and drizzle with remaining teriyaki sauce. Reheat vegetables to medium heat and saute for 5 minutes.

5. Let rest for 5 minutes and serve.
