Vegan Ginger White Bean Burgers

Vegan Ginger White Bean Burgers

Total Time: 20 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4

Ingredients
15 oz of cannellini beans
1/3 cup of nutritional yeast
1 tbsp of cornstarch
1/2 tsp of fresh ginger
2 tbsps of reduced sodium soy sauce
2 shallots
4 whole wheat hamburger buns
Sauce
2 tbsps of peanut butter
1 tsp of red curry paste

Directions

1. Add cannellini beans, nutritional yeast. cornstarch, fresh ginger, and soy sauce to a blender and puree until smooth.

2. Slice 2 shallots and add to a small frying pan. Saute for approximately 10 minutes on medium heat.

3. Heat a large frying pan on medium heat. Form 4 patties out of white bean mixture and cook for approximately 5 minutes per side, or until each side has lightly browned.

4. To make sauce, add peanut butter and red curry paste in a small bowl. Mix well and set aside.

5. When ready to serve, add white bean burgers to a toasted whole wheat bun, and top with shallots and peanut curry sauce.
