Vegan Huevos Rancheros

Total Time: 25 minutes | Prep Time: 15 Minutes | Cook Time: 10 Minutes | Servings: 4

Ingredients
15oz of tofu
2 cloves of garlic
1 jalapeno
1/4 cup of nutritional yeast
1 tsp of chili powder
1 tsp of black pepper
1 cup of cherry tomatoes
Optional
Extra nutritional yeast to taste

Directions
1. To press tofu, wrap tofu in a paper towel or dish towel and place between two plates. You may need to add a bowl to the top plate to add enough pressure. Let sit for 10 minutes.

2. Slice jalapeno and tomatoes, and mince garlic. Set tomatoes aside.

3. Crumble tofu into a large frying pan. Add in jalapeno slices, garlic, chili powder, nutritional yeast, and black pepper. Saute for 10 minutes, or until tofu has browned.

4. Garnish with cherry tomatoes and nutritional yeast to taste.
