Vegan Lemon Parsley Chickpea Flatbread

Total Time: 1 Hour and 20 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour and 10 Minutes | Servings: 4

Ingredients
1 cup of bread flour
1 cup of warm water
1 packet of active dry yeast
2 cups of cooked chickpeas
2 lemons
Fresh parsley for garnish

Directions
1. Add 1 cup of warm water and 1 packet of active dry yeast to a small bowl. Mix well and let sit for 5 minutes.

2. Add 1 cup of bread flour to a large mixing bowl. Pour in warm water and yeast mixture. Knead dough, cover and let sit for 30 minutes.

3. Preheat oven to 400 F and grease a baking pan. Add dough to baking pan and spread out evenly. Top with chickpeas and drizzle the juice of 1 lemon.

4. Bake for 40 minutes or until dough is fully cooked.

5. Remove from oven and drizzle with the juice of 1 lemon. Garnish with fresh parsley.
