Vegan Mango Pancakes

Vegan Mango Pancakes

Total Time: 35 Minutes | Prep Time: 10 Minutes | Cook Time: 25 Minutes | Servings: 4

Ingredients
1/2 cup of fresh mango
1/2 cup of unsweetened vanilla almond milk
1 cup of all purpose flour
1/4 cup of monk fruit sweetener
1 tsp of baking powder
1-3 tsps of vegan butter
Optional:
1/2 cup of fresh strawberries
Maple syrup

Directions
1. Add fresh mango and almond milk to a blender and puree until smooth.

2. Add all purpose flour, monk fruit sweetener and baking powder in a bowl and mix dry ingredients.

3. Pour in mango smoothie and mix well.

4. Heat a small frying pan to medium heat and add 1 tsp of vegan butter to pan. Add 1-2 tbsps of pancake batter to pan and cook for approximately 3 minutes per side, or until each side is golden brown and pancake is cooked through. Repeat until all batter is used. Batter yields approximately 4 pancakes. Note: Between batches, you may need to use more than 1 tsp of vegan butter to prevent sticking.

5. Optional: Garnish pancakes with 1/2 cup of fresh strawberries and maple syrup and enjoy!
