Vegan Mini Quiche Bites

Total Time: 35 Minutes | Prep Time: 15 Minutes | Cook Time: 20 Minutes | Servings: 10

8 oz of tofu
1/2 cup of nutritional yeast
1 tsp of paprika
1 tsp of black pepper
1 cup of all purpose flour
1/2 cup of water

!. To press tofu, wrap in paper towel and place between two plates. Note: You may need to add more weight - I usually add a bowl to the top plate.

2. Preheat oven to 350 F. Grease a muffin tin.

3. In a small bowl, combine flour and water. Mix well and let sit for 5 minutes.

4.. Portion dough into 10 round pieces and place into each cup. Flatten using fingers. The dough should line the bottom of the cup and a small portion of the sides.

5. In a mixing bowl, crumble tofu and combine with nutritional yeast, paprika and black pepper. Mix well. Portion mixture equally into each cup.

6. Bake for 20 minutes or until tofu begins to lightly brown on top.

7. Remove from oven and let cool.
