Vegan Mushroom Stroganoff

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
8 oz of chickpea pasta
1 tbsp of oat flour
1 tsp of paprika
1/2 tsp of black pepper
1/2 tsp of sage
1 tsp of cornstarch
1 cup of vegetable broth
1 tbsp of reduced sodium soy sauce
1 tsp of dijon mustard
2 cloves of garlic
1 yellow onion
14 oz of mushrooms

Directions
1. Bring a large pot of water to a boil and add in chickpea pasta. Reduce to medium high heat and cook for approximately 15 minutes, or until pasta is done to your liking.

2. Combine oat flour, paprika, black pepper, sage, cornstarch, vegetable broth, soy sauce and dijon mustard in a sauce pan and mix well. Simmer for 15 minutes, stirring frequently.

3. Add minced garlic, diced onion and sliced mushrooms to a large frying pan and saute for 15 minutes on medium high heat.

4. Once onions are translucent, add in cooked chickpea pasta and saute. Mix well and let cool.

5. Serve and enjoy!
