Vegan Noodle Soup

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings 4

4 cups of vegetable stock
8oz of udon noodles
3 cloves of garlic
2 shallots
4 shishito peppers
5 oz of shiitake mushrooms
2 carrots

1. Bring a large pot of water to a boil. Add udon noodles and cook for approximately 20 minutes or until done to your liking.

2. Heat a large frying pan to medium heat and drizzle with oil. Mince garlic and dice shallots, peppers, mushrooms and carrots. Add to frying pan and saute for 10 minutes.

3. Once udon noodles have been strained, combine noodles, vegetable stock and sauted vegetables together. Mix well.

4. Serve immediately or portion into tupperware.
