Vegan Oatmeal Cookies

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 6

1 cup of rolled oats
3/4 cup of oat flour
1/4 cup of coconut sugar
1/4 tsp of baking soda
1/2 tsp of cinnamon
1/2 tsp of vanilla extract
3/4 cup of almond milk
1/4 cup of melted vegan butter
1/4 cup of maple syrup

1. Preheat oven to 350F.

2. Add rolled oats, oat flour, coconut sugar, baking soda, cinnamon, vanilla extract, almond milk, melted vegan butter and maple syrup to a bowl.  Mix well.

3. Line a baking sheet with parchment paper.  Portion out 1 tbsp of mixture onto baking sheet.  Dough should yield 6 cookies.

4. Bake for 20 minutes or until cookies begin to brown.

5. Remove from oven and let cool.  Serve and enjoy!
