Vegan Orzo Recipe with Red Peppers

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
1 cup of orzo
3 cloves of garlic
3 red bell peppers
Sunflower oil
1 tsp of garlic powder
1 tsp of onion power
1 tsp of black pepper
2 tsps of parsley
1/3 cup of sundried tomatoes

Directions
1. In a medium sized pot, add 1 cup of orzo.  Cover with water and bring to a boil.  Cook for approximately 15 minutes, or until the orzo has become puffy and soft.  Strain and let cool.

2. While orzo is cooking, mince garlic and slice bell peppers.  Add to a large frying pan and saute for 10 minutes. 

3. Once orzo is done, add to frying pan with bell peppers and garlic.  Sprinkle with garlic powder, onion powder, black pepper and parsley.  Mix well.

4. Garish with sun dried tomatoes and cook for an additional 5 minutes on medium heat.  Remove from heat and let cool.

5. Serve and enjoy!
