Vegan Pasta Salad
Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4
8 oz of chickpea pasta
4 stalks of celery
2 petite red peppers
1/4 cup of a red onion
1 tsp of black pepper
fresh parsley for garnish
1. Bring a large pot of water to a boil and add chickpea pasta. Reduce to medium high heat and cook for 20 minutes or until pasta is done to your liking.
2. Slice 1 lemon and set aside. Slice 4 stalks of celery and red peppers finely. Mince red onion. Place in a large bowl.
3. When pasta is done, add to bowl. Drizzle with lemon and sprinkle with black pepper. Mix well.
4. Garnish with fresh parsley and serve. Alternatively, you can portion into tupperware for meal prep.
