Vegan Pistachio Pesto

Vegan Pistachio Pesto

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
8oz of chickpea pasta
1 cup of pistachios, deshelled
1 cup of mint leaves, loosely packed
1/2 cup of nutritional yeast
1 tsp of onion powder
1 tsp of garlic powder
1/4 tsp of sea salt
1/2 cup of sunflower oil

Directions
1. Bring a large pot of water to a boil.  Add in chickpea pasta and reduce to medium high heat.  Cook for approximately 15 minutes, or until pasta is done to your liking.

2. Add pistachios, mint leaves, nutritional yeast, onion powder, garlic powder, sea salt and sunflower oil to blender.  Puree until smooth.

3. Strain pasta and add in pesto.  Mix well and let cool.

4. Serve and enjoy!
