Vegan Potstickers with Beyond Meat Ground Beef

Vegan Pot Stickers with Beyond Meat Ground Beef

Total Time: 45 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4

Ingredients
3 large portobello mushrooms
1/2 lb of ground Beyond Meat
1 tbsp of black pepper
1/2 tsp of ginger
1 tsp of paprika
20 vegan wonton wrappers
1/3 cup of water

Directions
1. Add mushrooms, Beyond Meat, black pepper, ginger, and paprika to a blender. Puree until smooth. Note: If your blender is having trouble, add up to 1/4 cup of water.

2. Heat a large frying pan to medium heat and add Beyond Meat mixture. Saute for approximately 10 minutes or until mixture is dark brown and any excess liquid has evaporated. Set aside and let cool.

3. Add 1 tbsp of mixture to a vegan wonton wrapper. Wet edges and fold over into a triangle. Press to remove any air pockets from center and then press to seal edges.

4. Repeat until all mixture is used. Mixture should yield 20 potstickers.

5. Heat a large pan to medium high heat. Add in a single layer of potstickers and saute each side for 2 minutes. Note: Make sure to leave enough space between each potsticker so they don’t stick together.

6. Add in 1/3 cup of water and reduce heat to low. Cover and cook for approximately 10 minutes or until all excess water has evaporated. Repeat process until all potstickers are cooked.

7. Serve and enjoy!
