Vegan Pumpkin Muffins with Coconut Flour

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 8

Ingredients
1 cup of coconut flour
1/2 cup of rolled oats
1/2 cup of brown sugar stevia
1/2 cup of pumpkin puree
1 tsp of xanthan gum
1 tsp of baking soda
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350F. Grease a muffin tin and set aside.

2. Combine coconut flour, rolled oats, brown sugar stevia, pumpkin puree, xanthan gum, baking soda and unsweetened vanilla almond milk in a bowl and mix well.

3. Portion 1 heaping tbsp of batter into each muffin cup. Batter should yield 8 muffins.

4. Bake for 20 minutes.

5. Remove from oven, let cool completely and enjoy!
