Vegan Quinoa Bowl with Smokey Tempeh

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

1 cup of raw quinoa
8 oz of tempeh
1/2 tsp of liquid smoke
2 tbsps of reduced sodium soy sauce
1 cup of sliced mushrooms
2 cups of diced tomatoes
Optional: diced scallions for garnish

1. Rinse and strain quinoa. Add to a pot with 2 cups of water.

2. Bring quinoa to a boil and cook for approximately 20 minutes, or until all excess water has evaporated.

3. While quinoa is cooking, crumble tempeh into a bowl and add in liquid smoke and soy sauce. Mix well and let sit for 5 minutes.

4. Heat a medium sized frying pan to medium heat and add in tempeh and sliced mushrooms. Saute for approximately 15 minutes or until tempeh has browned and mushrooms have fully cooked.

5. Portion 1/2 cup of quinoa, 1/2 cup of tempeh mixture, and 1/2 cup of diced tomatoes into each bowl and garnish with scallions.
