Vegan Quinoa Burrito Bowl

Total Time: 30 Minutes | Prep Time: 15 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
1/2 cup of dry red quinoa
2 cups of vegetable stock
1 tbsp of diced red onion
3 on the vine tomatoes
1 cup of canned pinto beans
1 cup of canned black beans
Optional:
Chimichurri Sauce

Directions
1. Rinse and strain red quinoa. Add to a sauce pan and pour in 2 cups of vegetable stock. Bring to a boil and cook for approximately 15 minutes, or until all excess liquid has evaporated.

2. While quinoa is cooking, dice red onion and tomatoes. Set aside. Strain and rinse pinto and black beans. Set aside.

3. Once quinoa has cooled, add to a bowl and top with red onion, tomatoes, pinto beans and black beans. Drizzle with chimichurri sauce and serve, or portion into tupperware for meal prep.
