Vegan Salsa Verde Pizza

Vegan Salsa Verde Pizza

Total Time: 3 Hours and 10 Minutes | Prep Time: 10 Minutes | Cook Time: 3 Hours | Servings: 6

Ingredients
2 cups of bread flour
1 packet of yeast
1 cup of warm water
2 shallots
20 tomatillos
3 limes
3 cloves of garlic
2 lemons
3 jalapenos
3 green bell peppers
8 oz of vegan mozzarella cheese
1 cup of whole wheat flour or cornmeal

Directions
1. In a bowl, combine bread flour, yeast and warm water into a large bowl, Mix dough well for approximately 5 minutes. Let dough sit for 2 and 1/2 hours.

2. While dough is resting, slice shallots, tomatillos, jalapenos, and bell peppers, and mince garlic.

3. Heat a large frying pan to medium heat and add vegetables. Drizzle with the juice of 2 lemons and 3 limes and saute for approximately 20 minutes, or until vegetables have fully reduced and excess liquid has evaporated. Set aside.

4. Preheat oven to 450F. Lightly flour a pizza stone with whole wheat flour or cornmeal, using about 1 to 2 tbsps of flour. Alternatively, you can use a baking tray for this process.

5. Add remaining flour or cornmeal to a large flat surface. Roll out dough using a rolling pin in the shape of your pizza stone or baking tray. For this process, you want to to work the flour into the dough to prevent it from sticking.

6. Add dough to pizza stone or baking tray. Spread the salsa verde mixture evenly on top of the dough, leaving a 1 inch margin on the edges. Sprinkle vegan mozzarella evenly across pizza.

7. Bake for 20 minutes.

8. Carefully remove from oven and let cool. Slice pizza into six equal pieces and enjoy!
