Vegan Shredded Chickpea Tacos

Vegan Shredded Chickpea Tacos

Total Time: 20 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4

1 cup of cooked chickpeas
1 tbsp of soy sauce
1 tsp of cornstarch
1/2 cup of nutritional yeast
2 shallots
2 cloves of garlic
1 serrano pepper
2 petite bell peppers
6 campari tomatoes
1/2 cup of fresh parsley
4 whole wheat tortillas

1. Blend chickpeas until completely shredded. Set aside.

2. Heat a large frying pan to medium heat and drizzle with oil. Dice shallots and peppers and mince garlic. Add to pan and saute for 5 minutes.

3. Add shredded chickpeas, cornstarch, soy sauce and nutritional yeast to pan. Saute for an additional 5 minutes, stirring frequently.

4. Slice 6 campari tomatoes into wedges. Add to frying pan and garnish with fresh parsley.

5. Portion mixture onto a whole wheat tortilla and enjoy.
