Vegan Southwest Burgers with Beyond Meat

Vegan Southwest Burgers with Beyond Meat

Total Time: 25 Minutes | Prep Time: 15 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
1 cup of canned black beans
1/2 cup of yellow corn
2 tbsps of ketchup
1/2 tsp of liquid smoke
1 tsp of onion powder
1/2 tsp of garlic powder
2 shallots
2 Fresno peppers
1/2 lb of ground Beyond Meat
4 hamburger buns
4 slices of vegan cheese

Directions
1. Strain and rinse black beans and add to a medium sized frying pan. Add in yellow corn, ketchup, liquid smoke, onion powder and garlic powder. Mix well and saute on medium heat for 10 minutes. Remove from heat and let cool.

2. Heat a small frying pan to medium heat. Slice shallots and Fresno peppers. Add to frying pan and saute for 10 minutes.

3. Form 4 patties of our 1/2 lb of ground Beyond Meat. Heat a large frying pan to medium heat and cook patties for approximately 5 minutes per side, or until both sides have browned.

4. Add 1 tbsp of black bean mixture to bottom of hamburger buns (I used a vegan brioche hamburger buns). Add 1 slice of vegan cheese to each bun and top with Beyond Meat patties. Add 2 tbsps of shallot and pepper mixture to the top.

5. Serve and enjoy!
