Mini Vegan Strawberry Cheesecake Bites

Total Time: 1 Hour and 5 Minutes | Prep Time: 5 Minutes | Cook Time: 1 Hour | Servings: 9

Ingredients
1 cup of cashews
1/2 cup of pecans
1 tbsp of maple syrup
1/2 cup of strawberries
1/2 cup of unsweetened vanilla almond milk
Optional: extra strawberries for garnish

Directions
1. Add cashews to a small saucepan, cover with water and bring to a boil. Cook for 20 minutes, strain, and set aside to let cool.

2. In a blender, combine pecans and maple syrup. Blend until pecans have become fine.

3. In a blender, combine cashews, strawberries and almond milk. Puree until smooth.

4. Grease a mini muffin tin. Portion pecan mixture to line the bottom of 9 cups. Freeze for 10 minutes.

5. Remove muffin tin from freezer and portion cashew mixture on top of pecans. Freeze for an additional 20 minutes.

6. Remove from freezer and garnish with extra strawberries. Serve immediately.
