Vegan Strawberry Cheesecake Breakfast Parfait

Total Time: 25 Minutes | Prep Time: 5 Minutes | Cook Time: 20 Minutes | Servings: 1

1/2 cup of cashews
1/4 cup of almond milk
1 tbsp of maple syrup
1 cup of fresh strawberries
1/4 cup of rolled oats

1. Add cashews to a small saucepan, cover with water and bring to a boil. Reduce to medium high heat and cook for 15 minutes. Strain and let cool.

2. Once cashews have cooled, add to a blender along with almond milk and maple syrup. Puree until smooth.

3. Layer a small glass or bowl with rolled oats. Then layer with cashew mixture and strawberries.

4. Serve and enjoy!
