Vegan Sweet Potato Pancakes

Ingredients
2 zucchini
1 sweet potato
1/4 cup of chickpea flour
2 tbsp of flax seed meal
1 tbsp of potato starch
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of cayenne
2 tsp of paprika
Directions
1. Peel and grate sweet potato into shreds using a food processor or box grater. Grate zucchini and press excess moisture out using a cheese cloth or fine mesh strainer.
2. Add zucchini and sweet potato shreds to a bowl, along with chickpea flour, flax seed meal, potato starch, onion powder, garlic powder cayenne, and paprika. Mix well and form patties. Mixture should yield 8 patties.
3. Heat a large frying pan to medium high heat and add in a light amount of oil. Carefully add your patties to the pan and cook for approximately 5 minutes per side, or until each side has browned and patties are fully cooked through. Remove from heat and let cool.
4. Serve with your favorite dipping sauce and enjoy!
