Vegan Taco Soup - Slow Cooker Recipe

Total Time: 6 Hours and 15 Minutes | Prep Time: 15 Minutes | Cook Time: 6 Hours | Servings: 6

Ingredients
56oz of canned diced tomatoes
15 oz of pinto beans
3 cloves of garlic
3 shallots
3 petite bell peppers
2 Fresno chili peppers
1 tbsp of black pepper
1/2 cup of fresh cilantro
1 tbsp of brown sugar stevia
Shredded vegan cheese to taste
Vegan tortilla chips to taste (I used lime quinoa chips)

Directions
1. Slice shallots, bell peppers and chili peppers. Mince garlic.

2. Add canned diced tomatoes, pinto beans, garlic, shallots, bell peppers, chili peppers, black pepper, cilantro and brown sugar stevia to a slow cooker. Mix well.

3. Cover and cook for 6 hours in a slow cooker. Mix occasionally.

4. When ready to serve, top with vegan cheese and tortilla chips to taste. Serve and enjoy!
