Vegan Thai Red Curry Ramen

Vegan Thai Red Curry Ramen 

Total Time: 20 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 2

Ingredients
4oz of ramen noodles
3 garlic cloves
2 shallots
2 small carrots
2 thai chilis 
14 oz of coconut milk
1 tbsp of thai red curry paste
1 tsp of onion powder
1 tsp of garlic powder
Scallions for garnish

Directions
1. Bring a large pot of water to a boil.  Add in ramen noodles and cook for approximately 5 minutes, or until noodles are fully cooked.  Strain and set aside.

2. Mince garlic and slice shallots, carrots and thai chilis.  Heat a large frying pan to medium high heat and add a small amount of oil.  Add in garlic, shallots, carrots and thai chilis.  Saute for approximately 5 minutes or until carrots have softened.  

3. Add coconut milk, red curry paste, onion powder and garlic powder to frying pan.  Mix well until well incorporated.  Add in cooked noodles and mix well.

4. Once cooled, add to bowl and garnish with diced scallions.  Serve and enjoy!
