Vegan Vanilla Muffins with Coconut Flour

Total Time: 45 Minutes | Prep Time: 10 Minutes | Cook Time: 35 Minutes | Servings: 6

Ingredients
1 cup of coconut flour
1 cup of oat flour
1/4 tsp of baking soda
1/2 tsp of xanthan gum
1 and 1/2 tsps of vanilla extract
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven 350F.

2. In a bowl, combine coconut flour, oat flour, baking soda, xanthan gum, vanilla extract and almond milk.  Mix well. 

3. Portion 1-2 tbsps of mixture into each muffin cup.  Mixture should yield 6 muffins.

4. Bake for 35 minutes, or until muffins have browned.  Remove from oven and let cool. 

5. Serve and enjoy!
