Vegan Zucchini Pizza Bites

Vegan Zucchini Pizza Bites

Total Time: 35 Minutes | Prep Time: 10 Minutes | Cook Time: 25 Minutes | Servings: 2

Ingredients
1 zucchini
1/2 cup of tomato sauce
1/2 cup of softened cashews
2 tbsp of tapioca starch
2 tbsp of sunflower oil
1 tbsp of white wine vinegar
1 tbsp of nutritional yeast
1 tbsp of white miso paste
1/2 cup of water
Garnish
Black pepper
Fresh basil

Directions
1. Preheat oven to 375F and line a baking sheet with parchment paper.

2. Slice 1 zucchini into rounds and add to baking sheet.  Bake for 15 minutes.

3. Add cashews, tapioca starch, sunflower oil, white wine vinegar, nutritional yeast, white miso paste and water to blender.  Puree until smooth.

4. Remove zucchini from oven and portion tomato sauce onto each piece.  Pour on liquid vegan mozzarella and bake for additional 10 minutes.  Remove from oven and let cool.

5. When ready to serve, top with fresh basil and black pepper and enjoy!
