Veggie Couscous with Turmeric

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 5

Ingredients
2 cups of water
9 oz of couscous
1 tsp of black pepper
2 tbsps of turmeric
1 tbsp of dried basil
5 campari tomatoes
1/2 cup of sliced cucumbers
2 stalks of celery
2 shishito peppers

Directions
1. Add water, black pepper, turmeric, and dried basil to a pot.

2. Bring pot to a boil and remove from heat. Add in couscous and cover. Let sit for 15 minutes.

3. While couscous is cooking, slice tomatoes, cucumbers, celery and shishito peppers. Set aside.

4. When couscous is ready, add to a bowl and add in tomatoes, cucumbers, celery and shishito peppers. Mix well.

5. Serve immediately or portion into tupperware for meal prep.
